I've been looking for this kind of info/imagery as well. Didn't come up with much. The bathymetry option from buskid's link shows some, but not much.

I once worked for a business that scanned the seafloor and collected that x/y/z (depth) data for the bay and other local areas and it is very expensive to do.

First you need something to accurately collected depth information and time stamp that information.
Then you need a heave compensator that measures the boat's pitch, yaw and roll and time stamp that information.
Then you need a GPS device that has sub-meter accuracy and time stamp the location information.
Now take all that info and process it - meaning the angle of the beam that goes 'straight' down needs to have geometrical calculations applied due to the yaw, pitch, roll of the boat to calculate a new position and depth.

This is needed if you want detail. Please share if you find something with detail.
