When I mentioned to one cousin that
I would be serving Rockfish cooked
over the coals, the Greek Social Network's
lines lit up.
Grilled Whole Fish:
Merely gut, gill, and scale the fish. Prep by
seasoning with salt & pepper, and lathering
up with good extra virgin olive oil. Finally
stuffing the gut cavity with a lemon wedge
and strig of rosemary.
Baste with 1/3 olive oil, 2/3 lemon juice,
salt/pepper, shaken not stirred. Pour excess
basting juice over finally product.

OH very nice! Love rockfish!!! NOw that's the kind of recipie I can follow salt, pepper, olive oil..........tastyfish!!!

Wow that looks so good! How do you get the fish not to stick on the grill?, or is that what the olive oil is for? I gotta try this, hopefully I slay some rock fish on friday or at least some sand bastards!
