I made this for my wife for our anniversary last month, only thing I forgot was the parsley would have made it look even better. Tasted amazing! Fairly simple recipe. Roasted asparagus is one of my favorites. Little olive oil on a pan in the oven salt and pepper. Rice pilaf.

the burrrr blanc sauce is the shit! You could pour that stuff on almost anything and it would be good...minus the sea snake. Looks good Andy! :luxhello:

That is the most descriptive explanation I have seen for beurre blanc - and yes, it is an excellent sauce to pour over fish.

One option is to use the pan the you cooked the fish in (placing the fish in the oven to keep warm while making the sauce) to make the sauce, which then has more flavor from the fish. But you need to slightly under cook your fish in the pan since it will go in the oven.
