In all the mayhem recently, I may have caught a yellowtail or two. After the family got there share, I'm left with a few steaks. Whoever made the fish tacos at the mission bay tourney should share the wealth. They were delicious and some of the best I've had!!! So who has a good yellowtail fish taco recipe?

I made this recipe using some halibut I caught last week. I thought it was great.

I usually use rockfish for beer battered fish tacos.
Beer
dry pancake mix
fish of choice - cubed or chunked
sour cream
taco seasoning
tortillas - corn or flour, your choice
cabbage - shredded
cilantro & onion, finely chopped
limes
Mix about a tablespoon of taco seasoning (more or less) with a cup of sour cream. This is best done a couple hours ahead or the night before. Stir occasionally
mix equal parts beer and dry pancake mix - less beer if you like a thick crust, more beer if you like it thinner. Heat deep fryer to about 375. dip fish in batter and put in fryer - I use the basket on top of teh fish to keep it submerged. Fry til golden brown.
Smear some of the sour cream sauce on a warmed tortilla. Add fish, top with cabbage, cilantro and onion and a squeeze of lime.
Really easy and disappears as fast as I can make it

Mix Ancho Chili powder, pepper and salt together
Coat the fish with olive oil
Roll it in the spices
Bbq'd ~3 min per side
Serve with mango salsa

Go to fishermansbelly.com Plenty of recipes for yellowtail by a fisherman from this site. Can't go wrong, I've tried almost all of them and they are outstanding. I would go for the fishcakes using the yellowtail. I've tried it and everybody wanted more, lots more!

Was at your last and I'll be at your next...
I like mine dipped in a mixture of olive oil and soy sauce with some basic spices mixed in and then pan fried until it's brown and slightly seared/crispy on the outside.
