Yanni, have you ever used mackerel for poke? I tried some poke at the local Vons the other day but it wasn't fresh so the fish was mushy. I have some frozen mackerel I am looking to try something with and I was wondering about poke, since I haven't caught a YT yet

Harry,
The frozen mack is better left frozen. Its meat will turn to mush
thawed. Some fish will do that. Save it for lobster season. However,
fresh mackerel is fine for poke, but truly a pain in the ass. Since there
are too many bones to deal with.
Here's what you do with fresh mackerel, Japanese style. Soak the fillets in salt for an hour, then in vinegar for another hour. Chop them up and toss them in a salad. That's good stuff.
Now, quit screwing around with mackerel and put some time on the water, then you'll figure out how to catch yellowtail. Good luck.

thanks Yanni, I had to ask. I would love to quit screwing around and get some yellowtail. I'm hoping in the next week or two I will be making my first surf launch at LJ, no guarantee of catching anything but expanding my horizons.

Well that is one hellva good idea using a pineapple salsa ... wow, def need to try this one on the pineapple express.
