Did I Mention Rockfish?
When I mentioned to one cousin that
I would be serving Rockfish cooked over the coals, the Greek Social Network's lines lit up. Grilled Whole Fish: Merely gut, gill, and scale the fish. Prep by seasoning with salt & pepper, and lathering up with good extra virgin olive oil. Finally stuffing the gut cavity with a lemon wedge and strig of rosemary. Baste with 1/3 olive oil, 2/3 lemon juice, salt/pepper, shaken not stirred. Wow that looks so good! How do you get the fish not to stick on the grill?, or is that what the olive oil is for? I gotta try this, hopefully I slay some rock fish on friday or at least some sand bastards!

Great report, as usual. Thanks for sharing the mouth-watering photos. Sure is a nice change from the fish taco routine. Gotta go now before I drool all over my keyboard and cause a short.
