Got my first 40lb yellowtail, now I need some good ways to BBQ it. :luxhello:

Skin side down cook till it's done, add any flavors you like...butter with Parmesan is pretty tasty...I like to leave the skin on, it will save you from having to turn the fish:)

Its hard to go wrong with YT. Its a versitile and dense fish
That hold up great on the grill. It has enough flavore to stand
On its own but takes marinades well. Teriyaki is always a
Winner. Lemon pepper, hot pepper, any thing citrusy, its all
Good. Marinate fish just an hour or 2, not over night like beef.
Just don't over cook. And it will be great. And if you took the collars
Off they are a real treat on the grill. Mike

The collars are hard to beat, I did this weeks fish on the bbq with Evo, salt and pepper.

I like mine with lemon juice, a splash of Worcestershire sauce and plenty of black pepper. That being said I haven't had the honor of grilling a 40 lber.

I wish I got it on my kayak but, I got it on a sport boat out at the Island. I will put up a pictuere, This is my personal best on a yellow tail.:sifone:

YT is YT, & no matter where you catch it, and no matter how you cook it, it will taste very good.

You know what's a shame...is how many collars and bellies got thrown away over the years...without even a second thought...

They're easily the best tasting part of the fish, not the most appetizing looking but...absolutely fantastic. Good job on grilln that one, looks good! :luxhello:
