fried rockfish fillet
Whttp://i1225.photobucket.com/albums/...905_123438.jpgell I thought I'd share a little recipe action with you guys. It took my awhile to get this right but now my pan fried filets come out perfectly every time.
Start off with freshly caught fish of your choice. I like rockfish or sculpin but any mild flavored white fish will do http://i1225.photobucket.com/albums/...901_113955.jpg Fillet fish, rinse with fresh water and pat dry with paper towel, place aside. http://i1225.photobucket.com/albums/...905_123042.jpg In a bowl beat 1 egg for every pound of fillet. Set aside http://i1225.photobucket.com/albums/...905_123147.jpg For a nice crispy breading I like to use cornbread stuffing mix, crushed down to a nice fine consistency. Spread on a plate and set aside http://i1225.photobucket.com/albums/...905_123255.jpg Then set up your station with your fish, a bowl of flour, your egg and stuffing crumbs http://i1225.photobucket.com/albums/...905_123522.jpg Salt and pepper fish to taste, dredge in flower, dip fillet in egg and completely coat in crumbs http://i1225.photobucket.com/albums/...905_123849.jpg http://i1225.photobucket.com/albums/...905_123913.jpg http://i1225.photobucket.com/albums/...905_123942.jpg Use about 2 tbsp of goid olive oil in a non stick pan. Too much oil and you get mushy breading. Heat on high then just before placing fish in the pan reduce heat to med/med high. http://i1225.photobucket.com/albums/...905_124109.jpg Cook on one side for approximately 3min give or take for size/thickness of fillet. http://i1225.photobucket.com/albums/...905_124109.jpg Flip fillet and finish off by browning the opposite side. http://i1225.photobucket.com/albums/...905_124622.jpg Fillet should turn out firm and crisp with an opaque center http://i1225.photobucket.com/albums/...905_124800.jpg I like to drizzle a bit of seasoned rice vinegar to taste. http://i1225.photobucket.com/albums/...905_125128.jpg Enjoy! |

No offense but that way of preparing fish is very "simple" and ordinary! Plus you burnt the bread crumbs:eek:. Might of tasted good but did not look so good.:D

Nice photo layout, that's putting rockfish to good use.
We love rockfish. Our last trip to LJ wasn't giving up any of the big name fish, but we made the most of it bringing home 7 rockfish and a sculpin. Ate the 2 reds that night-Tempura style in a wok. Delicious. Your pics made me drool. I saw your haul on 9/1, nicely done. Aaron |

looks delicious!!! My father in law made some bugs and rockfish and turf on the bbq. marinaded the rocks in italian dressing. came out delicious!

Thanks for the write up. I'll try this next time. I usually just cook em in garlic butter over low heat.
