James, I pretty much took GregAndrew's idea and skipped a few steps

Took a 3' piece of PVC and shaved off enough material until it fit snug in the right rear pole holder
On the top end of the PVC I inserted a cap but first I drilled a 13/64" hole right in the center of the camera mount, counter sunk the hole and inserted a stainless steel screw fastened down with a stainless steel nylon nut. Since the camera mounts come with 3M adhesive I only used one screw to hold it down, the adhesive should keep the mount from moving around. The screw went in slightly sideways so I just took a fine file and shaved off enough material so that the camera could easily slide in and out.
Next, I took a level and placed it across the rear of the kayak and leveled off the kayak. Once the kayak was level placed the camera in the position that I thought it should be in and placed a smaller level on top it just to make sure it was also level.
Last thing, record a few seconds of footage to ensure you have good height and angle and you're set. I placed a small hash mark on both the PVC pipe and the kayak to use as reference points when mounting inserting the pole.
