Now could you run your fishfinder directly from the panel? Possibly depending on what kind of fishfinder you have....but again why? What are you gonna do in the dark or on cloudy days...? Keep it simple! Battery/fishfinder. Leave the solar panel at home. Charge at home. If your battery doesnt cut it....buy a bigger battery, be happy.
