Bob, funny you mention avocado. I forgot
to mention there's avocado in my Poke too.

And, no, Poke doesn't need to sit. Unlike ceviche,
the fish doesn't get a chance to cook in lemon. Most
Hawaiian Pokes don't include lemon. Many
used Sriracha/Mayo combo, or rice wine
and soy. Youtube has many hawaiian pokes
to ck out.
