I thought maybe I had overcooked it the first time, though I never over cook fish, but the second time I paid real close attention and it was still like chewing rubber so spotted bass are now catch and release only and I concentrate on catching anything else. In the other hand, BSB tastes great. Chinese restaurants will steam it for you with scallions.
