Bonito sashimi

Well, I've had it fried (pretty fishy) I've had it broiled (same), I've had it smoked (really pretty good) and I've had it in Hawiian Poki (also good), so I had to try it raw by itself. Made some nice fillets and removed the lateral line (dark meat) and bones. Chilled it a couple of hours and was surprised at how much it looked like the sushi grade Ahi you see in the markets. A neighbor and I had some with wasabe and soy and it was damn good!!! I think the key here was that I bled the fish immediately on landing it and kept it in the water on a rope stringer the whole time. The fish never warmed up or dried out like you get when you are on a boat putting them in gunny sacks. I was skeptical but pleasantly surprised. Taking the kids out on a half day boat today (they won the trip so if they puke it's not a total loss) so I'll see you all from the other side.
