Hook Em & Cook Em July Submissions

Sewer Halibut with Puttanesca Relish

Let’s get this started. I went out last Sunday and caught this sucker.





It's a personal best in regards to my catch & dinner. This is a must try dish!


Halibut:
1/2 cup olive oil
1 cup fresh basil leaves
Kosher salt and freshly ground black pepper
halibut fillets



Blend olive oil and basil then add salt and pepper. Brush halibut with basil oil and cook. After the fish is cooked add extra basil oil to fish.





Puttanesca Relish:
2 tablespoons red wine vinegar
2 teaspoons anchovy paste
2 cloves garlic, finely chopped
Kosher salt and freshly ground black pepper
1/4 tablespoon extra-virgin olive oil
1 large tomato
1 jalapeno
1/2 small red onion
2 tablespoons of olive oil
1/4 cup chopped kalamata olives
1/4 cup torn fresh basil leaves
2 tablespoons parsley


Char the onion, jalapeno, and tomato then rough chop. Mince basil, parsley and garlic. Add everything into a bowl and wait for the fish to cook.

Still Hungry?

BONUS! The best thing to do with the trimmings off of the filets is to make some IPA battered fish tacos.




IPA Beer Batter:
¼ cup flour
½ IPA Beer
1teaspoon salt
1 teaspoon pepper
1 teaspoon paprika
1tablespoon of baking powder
Mix everything in a bowl then let sit in the refrigerator for 1hr before using.

Pico:
2 Tomatoes
1 Jalapeno
1 Onion
1/2 cup Cilantro
juice of 1 lime
Salt to taste
Chop and mix everything. Let sit at room temperature for 1hr.

Just some old school sashimi with a side of rice, rooster sauce, eel sauce and soy.
After last weekend a new knife would be nice. I hooked one, hope I don't have to cook one

Not allowed in the kitchen

To me just as important as what I'm eating is whom I share the meal with and where we feast.

Roll yt in olive oil then salt, pepper, fresh garlic, fresh parsley.
Fresh made salad
Wild rice
Fine Wednesday afternoon in Temecula with my lady+dogs

grilled yellowtail tacos, marinaded in olive oil, lime, pepper and minced garlic.

Perfect pairing = Mexican bottle of Coke
