What to do with Guitarfish?
 Are there any special handling instructions? Bleed them right away? Recipes?

I don't "fret" about guitarfish, especially when you get them by the "bridge". Make sure they are legal and handle them like you would a shark. Bleed and fillet ASAP. They are very good eating.

My friends and I had a trip a few weeks-ago where we were landing legal-sized guitarfish every few minutes. We didn't know what to do with them so we threw them all back.
All-told, we probably landed about 250-300 lbs of guitarfish. Now that I know what we can do with them...

There is NO size limit to shovelnose guitarfish.
Leopard shark has to be 36", but not SGF. I have heard that the meat parallel to the back bone make a great ceviche. |

the shovel nose shout can be made into a nice pair of flip flops if it is dried properly....

To my surprise it tadted like deep fried clams Ive seen deep fried clams sold at different resteraunts so that was pretty cool. I have no doubt that not everyone would enjoy that taste though. All in all though they are a lot of work to deal with while on a kayak (or float tube), I would rather just release.
