Why don't you rig your own....

I don't own a hobie,. but I don't see why 500lb + 316 stainless wire rope won't work with copper crimps.
Or go heavy....just make sure the stainless is 316 and not 304. When I had a steering wheel on my canoe I used home depot plastic coated wire rope with clamps and plastic pulleys never had one problem.

Use stainless

Chafing clips instead of the fiber woven.
Check spec sheet get an OD on your cable and an ID on your crimp...
Go one size over

I'd have to look at the existing string for the diameter, but how much for say 40 feet of the cable and a few crimps.

You need to get a pair of cable cutters

To cut clean without fraying or you won't get the crimps to slide on the cable end. There cheap to on Amazon $11.00 good luck if you didn't live so far I would help you

Thank you for the offer to help string the kayak up, but I already found the wire and tools on Amazon. Thank you.
