Fish finder question?

A lowrance elite 5 with dsi, will DSI spot lobster or other things crawling around in the open?

I am going to bet no on that one, they have no air bladder, they would likely blend in like a rock. I think it is primarily designed as a "structure scan"

Though DSI provides more granular detail on the screen, note that the high frequency waves cannot penetrate more than 200ft.

I have also heard from numerous creditable sources and read articles that DSI doesn't work very well when shooting through a hull, it needs to be in the water to truly be "DSI"
