Great catch and awesome plates

On the searing I cheat and use a torch. Wet down the cutting board you will be using anyways and hit the loin with the torch. The one I have is the orange one from harbor freight. Works great for creme brûlée and evening up the browning on a turkey too. Searing in a pan, for me at least, is too easy to overcook
