Skin side down cook till it's done, add any flavors you like...butter with Parmesan is pretty tasty...I like to leave the skin on, it will save you from having to turn the fish

Its hard to go wrong with YT. Its a versitile and dense fish
That hold up great on the grill. It has enough flavore to stand On its own but takes marinades well. Teriyaki is always a Winner. Lemon pepper, hot pepper, any thing citrusy, its all Good. Marinate fish just an hour or 2, not over night like beef. Just don't over cook. And it will be great. And if you took the collars Off they are a real treat on the grill. Mike |

The collars are hard to beat, I did this weeks fish on the bbq with Evo, salt and pepper. Soooooooooo good! ![]()

I like mine with lemon juice, a splash of Worcestershire sauce and plenty of black pepper. That being said I haven't had the honor of grilling a 40 lber.
