I used to work in a fish market most of our knives were either Dexters or forschners. For the larger fish i prefered forschners. for the smaller fish that required a more flexable blade I used the dexter.

Forshners for sure..got mine from thelocal butcher,Works great for fish and wild game.
14" fliet. Holds a nice edge. And ez to keep razor sharp :-) ![]()

Kershaw is not good enough steel.
Forshner 8" Breaking Knife, and the Forshner 6" Boning Knife can do it all. Including filleting the skin off. ------------------------------- Dexter Russell are also good knives in the same sizes, and are a little less money.

My folding kershaw never held an edge and eventually rusted out inside. Dint know about their fillet knives but I know forshner boning knives do great at just about everything when it comes to big game.
