Some fishing kayaks seem to be designed for more stability than recreation kayaks, and the deck layout on some are better suited to carrying extra gear you'd be taking while fishing. Plus, some come with pre-installed rod holders and areas to mount your transducer.
Also, I'm not sure how useful a "flat water" kayak would be once you start heading out of the bays. The X-Factor you are looking at is good for fishing.

Anythings possible. Last year my friend Aaron bagged a yt on a 6 ft rental piece of garbage. It was halfway in the water the whole fight!
