There it is. Yani's videos are the best!
Might be a dumb question, but after the ~30hrs in the fridge, do you simply wipe the excess salt off or do you need to wash to fish before serving?

Shows how smart i am
From most recipes they wash it off and then dry it.
Some just have it wiped off. From what I can tell is its way too salty if not wiped off well or washed off.

My cured yellowtail with thinly sliced onions, thinly sliced lemon chunks, basil, cayenne pepper, pepper, drizzled with olive oil.
Quite tasty if I may say so myself.
