Yeah that is the digestive gland.... every yellowtail has one.

Doubt it was from a cookie cutter.... you really only see cookie cutter wounds on larger pelagic fish that frequent more tropical waters.... like swordfish and opah.

Def not a remora....

Def not lamprey as they live mostly in coastal and fresh waters

The wound could have come from many things. Hard to say. Yellowtail are tough fish and survive all kinds of wounds and battles.
